Whole Wheat Chocolate Chip Banana Bread

This is one of our favorite breads here in the farmhouse. It’s whole wheat and contains no refined sugar, so it’s a win-win in my book! Pair this with scrambled eggs and fresh fruit, and you have a wholesome and satisfying breakfast. (I mean, who doesn’t love a bit of chocolate in the morning?) Or, enjoy it on it’s own with a big cup of coffee and you’ll have what I call a “mom treat!” Moment of confession…I always keep some kind of pastry on hand and enjoy a small (or okay, sometimes huge if it’s been a particularly challenging day) portion with a hot cup of coffee each night after the Farmer Boy has gone to bed. It’s my sweet spot after a long day! Another thing I love about making this bread is that, it’s a one bowl recipe which means it can be thrown together really quickly and only one dish gets messy. Whole Wheat Chocolate Chip Banana Bread

Ingredients
  

  • 1/3 cup melted coconut oil (or extra virgin olive oil)
  • 1/2 cup pure honey (or pure maple syrup)
  • 2 eggs
  • 2 1/2 mashed ripe bananas
  • 1/4 cup milk (or water)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 3/4 cups White Whole Wheat Flour
  • 1/2 cup chocolate chips (or raisins, nuts, etc if preferred)

Instructions
 

  • Preheat oven to 325 degrees
  • In a large bowl, beat oil and honey together with whisk. Add eggs and beat well. Whisk in mashed bananas and milk.
  • Add baking soda, vanilla, salt, cinnamon and whisk together.
  • Add in flour and stir in with a big spoon until just combined. Lumps are okay! Mix in any chocolate chips, nuts, fruit, etc.
  • Pour batter into greased bread pan. (I use coconut oil to grease my pan.) 
  • Bake for 50-60 minutes. Insert toothpick and if it comes out clean, it’s done!

    I made this delicious banana bread and took it to our family dinner on Easter. My whole family and I loved it and of course it didn’t last long lol. Excellent recipe, very easy to follow and I had all of the ingredients on hand. Highly recommend!
