Quick and Easy Drop Biscuits
This is the perfect recipe to use when one is in a hurry and does not have time to make a biscuit which has to be rolled out and cut. These can be prepared and baked in 25 minutes or less and taste just as good as any other biscuit. I made these on Easter morning and was thrilled with the result! The Farmer got involved too and sifted while I prepared the butter and milk. I love working along side of him and how willing he was to jump in and help on a busy morning.
After baking for about 10 minutes, (the key is to NOT overbake!) I placed the finished biscuits into a basket lined with a tea towel and kept them covered until ready to serve. This will help to lock in the moisture to ensure you are left with a soft biscuit. I paired them with our wild violet jelly and they were delicious!
I had never made drop biscuits before so I wasn’t completely confident they would turn out, but as soon as Farmer Boy tasted one, he looked at me and said, “I knew they would be good, mom.” How I love that sweet, tenderhearted little boy and the way he so innocently carries in himself a constant confidence in his mama. These biscuits would also be wonderful topped with fresh gravy and served with scrambled eggs at breakfast. Quick and Easy Drop Biscuits

- 3 cups all purpose flour
- 3 tsp baking powder
- 1/2 tsp salt
- 2 Tbsp butter
- 1 1/2 cups milk
Instructions
- Preheat oven to 375 degrees.
- Sift together flour, baking powder, and salt.
- Rub in butter with fingertips until mixture resembles breadcrumbs.
- Add milk and beat to a soft dough.
- Scoop out a level tablespoon of dough and drop onto greased baking pan making sure each biscuit is one inch apart.
- Bake for 10-12 minutes. Do NOT over bake! This is the key in ensuring that you end up with a soft biscuit. Allow a few minutes to cool and then wrap biscuits in a tea towel to lock in moisture until ready to serve.
