Hearty Bean and Beefalo Chili

We love a good pot of chili here in the farmhouse! There’s nothing quite like the smell of the spices wafting through the house on a cold winter day, bringing with it the promise that a good meal is in store. Packed with protein and flavor, this chili is sure to please all who gather around the family table! Serve with shredded cheese and freshly baked cornbread for best results. Enjoy!

Hearty Bean and Beefalo Chili

Packed with protein and flavor, this chili can be cooked and ready to serve to serve within an hour!
Prep Time 15 minutes
Cook Time 45 minutes
Servings 6

Ingredients
  

  • 1 Ib. ground beefalo (or regular ground beef)
  • 1 medium onion, chopped
  • 2 15.5 oz. cans red kidney beans
  • 2 14.5 oz. cans diced tomatoes
  • 1 can tomato soup
  • 2 tsp minced garlic
  • 2 Tbsp chili powder
  • 2 Tbsp ground cumin

Instructions
 

  • Place ground beefalo and chopped onion in large skillet. Cook over medium heat until meat is browned. Drain excess fat.
  • In a large stockpot, add the cooked meat and chopped onion.
  • Drain and rinse the red kidney beans and add to meat mixture in stockpot.
  • Add the diced tomatoes (juice included), tomato soup, garlic, chili powder and ground cumin.
  • Stir all ingredients until well combined. Simmer over medium heat for 30-45 minutes.
  • Allow to cool and enjoy immediately! Pairs well with freshly baked cornbread.
